We are both fans of the one dish dinners and almost always have leftover chicken. This day I had chicken and broccoli leftover and decided to give this one a go. The longest part is chopping everything up and then it’s a breeze. A couple changes I made; I did not have minced garlic, so I crushed one myself and used a bit more than 1 clove. I used a whole yellow pepper as well because it is fun to go off track sometimes and see what happens!

2 tablespoons coconut oil
1 clove garlic, minced
1 cup onion, chopped
½ cup green/red pepper
3 cups broccoli
3 cups tomatoes, chopped
1 pound chicken, cooked, and chopped into small chunks
1 teaspoon pepper
1 teaspoon cayenne pepper
1.Heat coconut oil in saucepan,
2.Add garlic, onions, and peppers, saute until onions are translucent
3. Add broccoli and tomatoes and cook for 5 minutes or until broccoli is softened
4.Add the chicken and peppers
5.Stir well, reduce heat and simmer for about 10 minutes
