I have never had a deep love for cauliflower, probably because I usually eat it raw or lightly sautéed on the stove. That is why I was pumped to try this mashed cauliflower recipe from Paleo Comfort Foods, Homestyle cooking for a Gulten-free kitchen By Julie & Charles Mayfield.
I was happily surprised with how quick and easy this one was. With only a couple ingredients this is a sure fire winner.
I was lacking in my mashing tools department so I used the bottom of a big spoon and made it work. I love to get creative and just use what I have. I used a touch more garlic than what it called for and glad I did!
The cauliflower tasted much better than I could of imagined which is the best feeling in the world when cooking!
1 head fresh cauliflower
1 cup chicken stock
1/4 teaspoon pepper
2 cloves of garlic, crushed
1.Cut the cauliflower head into small chunks
2.Place all ingredients in a saucepan and bring to a boil
3.Reduce heat, cover, allow to cook for 20 minutes or until cauliflower is soft and easily mashed
4.Pour cauliflower into a bowl and either mash with a tool or use a blender/food processor- if too dry, add water or chicken stock.
**Cauliflower has a lot of water in it, better to use too little at first then add more when needed verse too much liquid.
